Sorry about the lack of posts over the past week. I spent this past weekend at the beach (I actually tanned a little!!) and this week has been pretty busy with school. Since I’m having to spend most of my time studying and doing homework, I haven’t really been cooking much. However, I did want to share one really, really basic recipe that I couldn’t get enough of.

IMG_5602It feels ridiculous to even write about this recipe, but I loved it, so here it is. I took one can of vegetarian baked beans, added green and red bell peppers, onions, and garlic sauted in olive oil, and spicy brown mustard. A lot of spicy brown mustard. I’ll be honest – I’m a mustard whore. I’ll put it on just about anything. The combination with the baked beans was simply amazing, and I ended up eating almost a whole can by myself because I kept going back for more! I also had two Gimme Lean sausage patties topped with (you guessed it) mustard. It was yums. 🙂

Today for lunch I decided to try something I’d never done before: sweet potato fries. I used the recipe from La Cucina Vegan and they turned out great. I dipped them in goddess dressing since I didn’t have any ketchup.

Lately I’ve been thinking a lot about incorporating more raw and living foods into my lifestyle. I’ve dabbled in living foods before, and it’s not hard to understand what all the hoopla is about. After eating a raw meal I do feel a lot better and clearer. I doubt I go 100% raw (sometimes all I want is comfort food), but I’m going to start planning the majority of my meals to incorporate some raw food.
