I’ve been craving something sweet for days, which is pretty odd considering I don’t have much of a sweet tooth. Last night I spent what was probably too much time flipping through Isa and Terry’s Vegan Cupcakes Take Over the World. The biggest problem in choosing which cupcake I would make was money – I’m poor. I wanted to have to buy very few ingredients. It came down to either the peanut butter cupcakes, chai latte cupcakes, or the pineapple right-side-up cupcakes.

Pineapple is amazing. So that’s what I chose.

The recipe was easy, except I ended up with only enough batter for nine cupcakes, rather than twelve. Not a big deal though.

Each one was topped with a cute little maraschino cherry. Aren’t they pretty?

Yummy. They weren’t too sweet, which was nice. Also, because they cool in the refrigerator, they would be incredible for summer. I couldn’t test that theory today though – it’s 50 degrees and rainy.
