Despite not having much of a sweet tooth, on occassion I do get a craving for my favorite cookies – chewy butterscotch chip.
The recipe is the chocolate chip cookie recipe from Vegan Cookies Invade Your Cookie Jar, but with vegan butterscotch chips subbed for the chocolate (Food Lion brand is vegan). Recently a friend gave me a bag of vegan white chocolate chips and I’ve been mixing those in with the butterscotch for a nice contrast.
I don’t bake sweets very often, mainly because on the rare chance that I do get a craving, I know I’m going to be satisfied with just one tiny bite. Sometimes that means just handing out the remainder of the cookies or cupcakes to friends, but more often than not I’ll just choose to ignore the dreams of Pineapple-Upside Down Cupcakes that I’m having.
So because of this lack of practice, I’m not the best baker. In fact, before I made the successful batch of cookies you see above, I’d had four cookie failures in a row. Every time I made them the cookies would spread together and cook unevenly, so I just ended up with batches of sticky cookie cardboard. My determination for re-learning how to make cookies lead me to a number of websites and experiments. In the end I figured out that problem I was having was incredibly simple to fix – adding more flour. I’m very happy I didn’t give up on cookies altogether and that now I have the confidence to branch out and make a variety of cookies rather than just the standbys I make all the time.
