When you make someone enjoy a food that they previously hated, it’s pretty fulfilling. It’s certainly a good way to know you did a great job making that food.

A couple days ago I made the Carrot Raisin Spice Chewies from Vegan Cookies Invade Your Cookie Jar. There were plenty of resulting cookies, so I took a few to a friend that I work with. She hates raisins and almonds (I replaced the pecans in the original recipe), but despite that she told me the cookies tasted incredible.

The cookies really were incredible. I used 3/4 cup whole wheat pastry flour with 1 cup all-purpose, and the healthiness of the whole wheat paired nicely with the shredded carrots. Actually, those ingredients  also went well with the raisins and almonds.

I used a Meyer lemon for the lemon glaze, which produced a super-flavorful lemon glaze. Of course, since the glaze was pretty much just powdered sugar, the cookie definitely wasn’t healthy. But since it was delicious, I doubt anyone will care. 🙂
