It’s rare that I crave anything “meaty”, but a few days ago I found myself wanting something of the sort. I had a couple small boxes of vital wheat gluten, but I didn’t want to actually make a batch of seitan, so I settled on a recipe for seitan nuggets.
This recipe is from Joanna Vaught, and it’s super easy and fairly quick. My boyfriend thought they tasted “weird” at first, but after a few bites he said he liked them. I enjoyed them immediately, and they reminded me of all the chicken nuggets I ate as a kid.
I served these with pan-fried zucchini with balsamic vinegar, and Italian green beans and potatoes.

I’m the same way – I rarely go for fake meats, but sometimes those chicken nuggets are just what I need to bring me back to my meaty childhood! Your zucchini look done to perfection too – looks like the perfect meal!
