Golden tater-tot goodness. This is the brewpub tater-tot pie from Tamasin Noyes’s American Vegan Kitchen. Tater-tots are little nuggets of joy, so when they’re placed on the top of a tvp-mushroom-onion-etc mix and baked, you know it’s automatically going to be delicious.
This is delicious as is, but when I make it next time (and there will be a next time), I think I’m going to add corn. Where tots are nuggets of joy, corn niblets are nuggets of sunshine. Also, this would probably be good with melted Daiya or just a simple nooch sauce between the tvp mixture and the tots.
In unrelated news, I hate doing laundry at a laundromat. Most agonizing 1 hr+ ever.
