On days when I work the closing shift (2-10:30 pm), I want to make a quick, filling lunch before I head out. Yesterday was one of these days. I had some vegan tortillas, and I was definitely up for a wrap.
I couldn’t think of what I wanted exactly, but then I realized I had a few vegetables I needed to use up. So I roasted some potatoes, squash, carrot, and green pepper for the filling.
While the veggies were roasting, I marinated some onion. I love marinated onions, and they add a lot of depth to a dish. For this quick marinade, I used olive oil, soy sauce, and balsamic vinegar. It was very simple, but tasted great.
I also threw together some chipotle lime mayo. I mixed 1 diced chipotle pepper and 1 Tbs adobo sauce with a big scoop of Vegannaise and the juice of 1/2 a lime. It was really tasty (and spicy!).
When the veggies were done, I tossed everything in the tortilla.
I ate it alongside a piece of roasted yellow corn.

The sauce looks awesome. Must try. I usually do the same thing. Whatever’s around, wrap it in a tortilla and you’re good to go.

This looks good! I’ve been making a lot of wraps to eat at work. I make two small ones because I usually only have a few minutes to eat; that way, I can finish one wrap and return to the other one later. Roasted beats are my favorite wrap ingredient.
