My cheese-loving boyfriend eats a lot of quesadillas, so when I found some vegan flour tortillas at Amazing Savings I decided to use what little bit of the 5lb bag of mozzarella Daiya I had left to make vegan quesadillas with him.
To be honest, he did most of the assembly and cooking. I made the “meat” portion – vegan taco meat sauteed with button mushrooms and red and yellow peppers.
Then came the cooking. My boyfriend came up with a very nice method for flipping the quesadillas. Here’s a video demonstration:

He topped it off with black bean and corn salsa and diced avocado.
This was the first vegan quesadilla I’d had in a really long time. It was so gooey and delicious. We drank some Mexican beer with it.
I’ll be honest, this was so yummy it really moved me… almost to tears. Not really.
